RubyBlues Bakery had our Grand Opening on November 27, 2021 a real dream come for myself and my family.
St. Thomas was a city we would visit as a family during annual holidays, from the UK, where I was a nurse and teacher. Canada and specifically St. Thomas soon became our second home. After years of family vacations in this area, it became clear this was where we wanted to call home for our future. We arrived in Canada approx. six years. Baking has always been a true love of mine so I applied for a study permit, and was soon a full-time student at Fanshawe College where I studied and graduated with a Culinary Diploma as well as a Baking & Pastry Arts Diploma. I gained employment at a bakery shop where I eventually became their head baker. Over time I was looking for a change, something new, exciting and could call my own, and this was how RubyBlues came to be.
Baking is my therapy, my artwork, a true labour of love. Every cake I make is unique and made specific to my customer’s requests. RubyBlues has brought some of the UK’s favourite deserts to town. Our Banoffee Pie, Eclairs, and Cheesecakes as well as Sticky Toffee Pudding have become some of our hottest items.
My favourite part of my business is that RubyBlues plays a role in family celebrations and milestones offering celebration cakes as well as personalized cake toppers made in store by my husband Craig. To see customers, pick up their orders and watch their faces light up, truly makes my heart skip a beat. I love my daily interaction with my walk-in customers, who share their day with me and leave with their slice of heaven to end their day or to meet up with friends for visits.
St. Thomas has truly opened their arms to RubyBlues. There has been so much support from this community, through Facebook shares, Instagram comments, people gathering together and sharing their experiences and thoughts of their treats. It has been such an overwhelming and tremendously amazing experience that I am fortunate enough to embrace every day.
